Applewood smoked chipotle chicken tostada with avocado lime crema, cilantro and lime zest

SECOND
Chopped Mexican salad with a cilantro lime vinaigrette

MAIN
Birria stuffed chiles relleno, topped with beef consume and served with saffron rice and grilled vegetables

DESSERT
Mango dragonfruit tart with vanilla bean pastry cream


About the Chef

Chef Jeff Neilson is originally from Northern California; he fell in love with the flavors of Mexico from a young age. As a child of a single father, he became fiercely independent in the kitchen and began entering local competitions in his late teens and early 20s claiming titles for best chili Verde, best spaghetti sauce, and best chili.
He became an executive chef at the age of 23 and has worked for many successful restaurants over the course of his career; he has also owned various culinary businesses of his own such as J plus catering, El Guapo‘s tacos, and Chef’d LLC.

He has been married to his beautiful wife and best friend, Kristen, for 16 years and they currently live in the Chapin, South Carolina area with their three children: James, Brooklyn, and Sophia. They are expecting their fourth child later this year.
